I have been eating these like crazy lately because they are quick, healthy and tasty!

I change it up. In this one I used lox and regular salmon with a side of pico

Get creative with the sauces. I love this Chipotle Boar’s head one and What’s Gaby Cooking Basil Vinaigrette. I made a bunch of the vinaigrette when we had fresh basil from our backyard and froze it.
